Caprese Salad Skewers

These Caprese salad skewers make for a delicious and easy diabetes-friendly snack or side-dish, and are fancy enough to serve as a crowd pleasing appetizer. Better yet, they take only 10 minutes to prepare and require only a handful of ingredients!

Ingredients

  • 12 cherry tomato
  • 12 mozzarella cheese mini balls
  • 12 leaves basil fresh
  • 12 leaves arugula or spinach leaves
  • 1 tbsp balsamic vinegar
  • Pinch pepper
  • 6 small wooden skewers or 3 skewers cut in half

Instructions

  • Rinse the cherry tomatoes and basil leaves. Pat them dry with a paper towel.
  • Assemble the skewers by threading a cherry tomato onto a wooden skewer, followed by a basil leaf, a ball of mozzarella cheese, and a folded arugula or spinach leaf. Repeat this pattern one more time so that each skewer contains doubles of each ingredient.

  • Arrange the skewers on a serving platter.
  • Drizzle the balsamic vinegar over the skewers as well as a pinch of pepper.
